Gingerbread cupcakes
Happy second Advent Sunday! Ginger is definitely my favourite winter spice, it literally smells of Christmas. If you love ginger as much as I do, try making these cupcakes! You will love them for sure.

(Makes 12)
Cupcakes:
185g unsalted butter, soften
100g caster sugar
3 eggs
240g plain flour
half tsp salt
1,5 tsp baking powder
3 tsp ginger
half a tsp cinnamon
150ml yogurt
2,5 tbsp honey
Ganache
frosting:
125ml double cream
2,5 tsp ginger
1,5 tsp allspice
1 tsp cinnamon
160g white chocolate
315g mascarpone cheese

Ginger biscuits

1. Start by making the frosting: combine
the spices with the double cream and pop it into the microwave to heat. When
it’s almost boiling pour it over the chocolate and stir until there are no
lumps. Leave for 10 minutes to cool down a bit and then using a spatula mix it
into the mascarpone cheese. Pop it in the fridge.
2. Preheat your oven to 180C.
3. Beat the butter and sugar for 5 minutes
until you’re left with a pale and fluffy mixture. Add one egg at a time, mixing
well after each addition.
4. Mixing all the time add half the amount
of flour, baking powder and spices.
5. Pour in the yogurt, honey and the
remaining flour. Mix well.
6. Pour the batter in a cupcake tray lined
with paper cases. Bake for 25-30 minutes in your preheated oven.
7. Once the cupcakes are cooled down, frost
them and decorate with your favourite ginger biscuits, white chocolate shavings
and cinnamon.

Cupcakes:
185g omekšanog maslaca
100g kristal šećera
3 jaja
240g glatkog brašna
pola žličice soli
1,5 žličica praška za pecivo
3 žličice đumbira
pola žličice cimeta
150ml jogurta
2,5 žlice meda
Ganache:
125ml vrhnja za šlag
2,5 žličice đumbira
1,5 žličice pimenta
1 žličica cimeta
160g bijele čokolade
315g mascarpone sira
Ukrašavanje:
Keksi (medenjaci ili paprenjaci)
Nasjeckana bijela čokolada

1. Prvo pripremite kremu: u vrhnje ubacite
začine i zagrijte u mikrovalnoj. Prije nego zakuha prelijte preko čokolade i
miješajte dok se čokolada skroz ne otopi. Ostavite desetak minuta da se ohladi
pa koristeći špatulu umiješajte u mascarpone. Stavite u hladnjak.
2. Zagrijte pećnicu na 180C.
3. Miksajte maslac i šećer oko 5 minuta dok
ne postane prozračan i svijetlo žuti. Dodajte jedno po jedno jaje, miksajući
nakon svakog dodavanja.
4. Miksajući i dalje dodajte pola brašna,
prašak za pecivo i začine.
5. Ulijte jogurt, med i ostatak brašna i
dobro izmiksajte.
6. Napunite kalupe i pecite u zagrijanoj
pećnici 25 do 30 minuta.
7. Kada se cupcakesi ohlade, namažite ih
kremom i ukrasite.
