Muffini od borovnica i limuna
Late autumn means the start
of Citrus season, so this Friday I’m bringing you the recipe for this classic
taste muffins, but with a zingy twist. Give them a go this autumn, to bring at
least a bit of sunshine in your gloomy day.
TIP: you can use both fresh
and frozen berries; if using frozen, place them in a collander to defrost
first.
Kasna jesen označuje početak
sezone citrusa, pa vam tako ovog petka donosim recept za klasične muffine, ali uz
dodatak limuna postaju još sočniji i ukusniji. Probajte ih ove jeseni, da si
bar malo zasladite ove tmurne dane.
SAVJET: možete koristiti i
smrznute i svježe borovnice; ako koristite smrznute, prvo ih stavite u cjedilo
da se odmrznu.

Blueberry
and lemon muffins
(Makes 12)
320g plain flour
2 tsp baking powder
120g caster sugar
half tsp salt
2 eggs
200ml yogurt
20ml lemon juice
110ml vegetable oil
200g blueberries
zest of 2 lemons
2 tbsp brown sugar
1. Preheat your oven to 195C.
2. Combine the flour, baking powder, caster
sugar and salt in a bowl. In a second bowl, whisk the eggs, yogurt, lemon juice
and oil, and pour into the dry ingredients. Mix until combined.
3. Add the blueberries and lemon zest and
fold in gently.
4. Line your muffin tray with muffin cases
and fill them all the way up. Sprinkle each muffin with brown sugar.
5. Pop them into the oven and bake for
20-25 minutes. 5 minutes to the end turn the oven up to 220C to give them a
nice golden top.
6. Allow to cool for 15 minutes before
taking them out of the tray.

320g glatkog brašna
2 žličice praška za pecivo
120g šečera
pola žličice soli
2 jaja
200ml jogurta
20ml limunovog soka
110ml suncokretovog ulja
200g borovnica
korica 2 limuna
2 žlice smeđeg šećera
1. Zagrijte pećnicu na 195C.
2. Pomiješajte brašno, prašak za pecivo,
šećer i sol. U drugu zdjelu, s pjenjačom pomiješajte jaja, jogurt, limunov sok
i ulje i izlijte u suhe sastojke. Miješajte dok se ne poveže.
3. Dodajte borovnice i koricu limuna i
nježno umiješajte.
4. Napunite kalupe za muffine skroz do
kraja. Svaki posipajte sa smeđim šećerom.
5. Pecite 20-25 minuta. Pet minuta prije
kraja dignite temperaturu na 220C da šećer dobije zlatnu boju.
6. Prije nego ih izvadite iz kalupa pustite
ih 15 minuta da se ohlade.
